Even the most organized hockey parent knows the dinner struggle - especially after late practices or long tournament days. Here are two ideas that score big on speed and nutrition:
Sheet Pan Chicken Fajitas
- What you need: chicken breast strips, onions, olive oil and fajita seasoning.
- How to make it: Toss everything in olive oil and seasoning, spread on an Extra Large Sheet Pan and bake at 400°F for 20 minutes. Serve with tortillas, cheese, and salsa.
- Why it works: One pan, minimal cleanup and everyone can build their own fajita. You can also make this early in the day and leave in the refrigerator for microwaving at dinner time!
Slow Cooker BBQ Pulled Pork Sandwiches

What you need: Pork shoulder, BBQ sauce (our favorite is Sweet Baby Rays), a splash of apple cider vinegar, burger buns, and coleslaw mix.

How to make it: In the morning, place the pork shoulder in a Slow Cooker (I highly recommend this one - https://amzn.to/41GpsjF) with BBQ sauce and a splash of apple cider vinegar. Cook on low for 8 hours. Shred and serve on buns with coleslaw.
